Beef Cutting Options

Upon booking in your cattle beast, we will send you out a form which has all this information on it in slightly more detail.

If you are wanting anything that is not on our list, please get in contact with us and we can discuss your options so we can do our best to provide what your wanting.

We also do specialty cuts such as T-bone, Tomahawk or Prime Rib on request.

All animals will end up with a quantity of mince and meat for small goods (or grade 2 mince) even if you don’t select any options for mince or sausages. This is through the boning and trimming process your offcuts are graded into either premium mince or small goods (fattier mince which is considered better for small goods). However how much you end up with is dependent on the size of your animal.

We recommend if you want more than two different types of small goods that you select some muscle groups for ‘sausages’

Our rule of thumb is maximum two options per section for a whole animal or one option per section for half an animal.

PACKAGING

BULK PACKAGING

$1.60/kg hanging weight.

We break down your animal as requested. We then package each muscle group into a large bag with the appropriate label, and you collect from us and package it all up yourself. The meat is sliced as close to your pick up time as possible to keep it in the best condition and minimize bleed out. This means you will need to be available for a pick up during the week. We recommend bringing bins or put a mat in the back of your vehicle incase of any leakage from the bags.

BULK PACKAGING + MINCE BAGGED

$1.80/kg hanging weight.

Make your packaging a little easier by letting us bag your mince for you. All your steaks, roasts, stewing meat etc will be sliced to your liking and left fresh for you to bag yourself, and your mince will be bagged into 500g tubes and frozen.

VACUUM PACKAGING

$2.00/kg hanging weight.

We break down your animal as requested. Meat is packed into labelled vacuum sealed bags into portion sizes that you have chosen, and then frozen fully.

Sausages and sausage bagging is an additional cost. You can find this on our small goods page.

Meat Collection

You will be contacted during the week for the time for your meat pick-up.

Generally pickup is on a Saturday or Sunday morning; 11-12 days from when your animal was dispatched.

Pickup times can be flexible, just give us a call if you cant make it and we can arrange something that works for everyone.

However we do require your meat to be picked up within 1 week of the collection day unless discussed prior.

All meat (except bulk) will be completely frozen down into manageable sized boxes ready for your freezer!
